The Secreto 07 is a delicacy that is,loved in the world because of its subtle taste and fine mouthfeel. Butcher's Store makes it from ribeye, which they carefully select for the perfect fat marbling.
The meat is then rubbed with a secret mixture of seven herbs and spices. After it has been rubbed with herbs, the drying process starts for seven weeks. Every day the Secreto 07 is turned over so that the taste can penetrate everywhere. During these seven weeks enzymes break down the muscle tissue and a large part of the liquid disappears from the meat. This results in exceptionally tender meat with a deep intense flavor.
Secreto 07 is a real winner on a charcuterie board, wafer-thinly cut. There's also an artisanal ravioli filled with Secreto 07. Secreto 07 is recently available in the form of a traditional croquette. Tasters are already convinced. It is a taste explosion that will make for an unforgettable aperitif or appetizer.
